Carrots are one of my favorites in garden too. Easy to grow besides being used in stews, with roast, I always have to make carrot cakes. Ask my son what his favorite cake and he will say carrot cake. Forget the box make it like grandma's. All my kids love homemade carrot cake . If you've never had homemade Easter is perfect time to make one.
