Persimmon Bread

Ingredients:
3-1/2 cups all-purpose flour
2-1/2 cups sugar
2 teaspoons baking soda
1-1/2 teaspoons salt
1 teaspoon ground nutmeg
2 cups puréed persimmons (4 to 5 fruit)
1 cup (2 sticks) unsalted butter, melted and cooled
4 eggs
2/3 cup brandy
2 cups chopped walnuts or other nuts
2 cups raisins or other dried fruit

Instructions:
Preheat oven to 350°F. Butter two loaf pans and dust with flour.

In a bowl, combine flour, sugar, baking soda, salt, and nutmeg. Make a well in the center.

In a separate bowl, combine persimmon purée, butter, eggs, and brandy. Add to well in dry ingredients and stir to blend. Add nuts and raisins and stir until just combined. Pour into prepared pans. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

Persimmon pudding is the classic way to enjoy this fruit! The baked dessert has the taste of pumpkin and the texture of gingerbread! The below persimmon pudding recipe is from the “Indiana Nut Growers Cookbook” (1995), courtesy of the Indiana Nut and Fruit Growers Association.

Ingredients:

2 Cups persimmon pulp
2 Cups sugar
3 small eggs
1/2 stick (4 Tablespoons) margarine
1 teaspoon baking soda
1/2 Cup buttermilk
1-3/4 Cups sweet cream (or milk)
1 teaspoon cinnamon
2 Tablespoons additional persimmon pulp
1-3/4 Cups flour
1 teaspoon baking powder

Instructions:

Mix together the persimmon pulp, sugar, and eggs.
Mix baking soda with buttermilk and add to mixture in bowl.
Melt margarine in a baking pan and add to the mixture.
Sift flour and baking powder together and add alternately with cream or milk. Add cinnamon and mix well.
Fold in the additional 2 Tablespoons persimmon pulp.
Pour into 13 x 9-inch metal pan and bake at 350 °F for 55-60 minutes. Be careful not to bake over.
Serve with a dollop of whipped cream, and enjoy!

Oatmeal Peanut Butter Muffins

Ingredients:
• 1 1/4 cup flour
• 3/4 cup oats
• 3/4 cup brown sugar
• 3 teaspoons baking powder
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 1 egg
• 1/3 cup peanut butter
• 1 1/4 cup milk
Instructions:
Combine the flour, oatmeal, brown sugar, baking powder, salt, and cinnamon. Set aside.
In a separate bowl, beat the egg. Stir in the peanut butter and milk until smooth.
Slowly add the wet ingredients to the dry ingredients. Stir until just combined.
Line muffin tins and fill each cup 3/4 of the way full.
Bake at 375° for 15-17 minutes or until a toothpick in the center of the muffin comes out clean.
Cool on a wire rack.

Cooking your on meals from scratch is how you get healthier and stay healthier by eating healthier foods. It is all about good choices.

Knowing how to cook it a valuable and an important skillset, there will come a time when those who do not know how to cook will find themselves in trouble.

Buy used cookbooks, used baking books, and used canning and preserving books... and keep them in your household's kitchens for easy use.
Books are a valuable resource especially when you have handy right in your kitchen.
