Summer and fall work is done. Time for grain cleaning. Einkorn goes through 70 year old Clipper cleaner which has a series of four screens of various sizes. I have about 100 screens and some experimentation gives the combination for the cleanest grain. The machine is made of red oak because the designers realized metal would fatigue from the vibration but not so with oak. Lines of these machines run 24 hours a day in commercial facilities.
