Ingredients:
2 tablespoons vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon oregano (preferably Mexican oregano)
1 tablespoon tomato paste
1 can (14 oz / 400g) tomato sauce
1 cup (240ml) chicken or vegetable broth
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon sugar (optional, to balance acidity)
1 tablespoon apple cider vinegar or lime juice (for a tangy finish)
Instructions:
Heat the vegetable oil in a medium saucepan over medium heat.
Add the chopped onion and cook for 4–5 minutes, or until softened.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the chili powder, cumin, smoked paprika, and oregano. Stir to coat the onions and garlic with the spices, cooking for about 1 minute to toast the spices slightly.
Stir in the tomato paste and cook for 1–2 minutes until it darkens slightly.
Add the tomato sauce, broth, salt, black pepper, and sugar (if using). Stir to combine.
Bring the sauce to a simmer, then reduce the heat to low. Let it cook for 15–20 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
Stir in the apple cider vinegar or lime juice to add a fresh, tangy finish to the sauce.
Taste and adjust seasoning as needed. If the sauce is too thick, add more broth or water to reach your desired consistency.
Let the sauce cool slightly before using in enchiladas or storing it in an airtight container in the fridge for up to 1 week.
How to Use It:
Enchiladas – Pour the sauce over rolled tortillas filled with meat, cheese, or beans, and bake until bubbly.
Tacos – Drizzle on tacos for an extra layer of flavor.
Burritos – Use as a topping for burritos or even a base for nachos.
